Each of these pearls is a tender green tea leaf, hand-rolled and scented over several nights with fresh jasmine blossoms. Drop a few into a glass and watch them unfurl as they release a sweet, perfumed aroma and a silky, honeyed taste. Use water just below a simmer, around 80°C, and steep for two minutes. The pearls can be infused three or four times, and each cup tastes a little different.
