We extrude our pasta through traditional bronze dies, which give each piece a rough, porous surface that holds sauce beautifully. It is made from just two ingredients, durum wheat semolina and water, then dried slowly at low temperature for a firm, toothsome bite. Choose rigatoni for hearty ragù, spaghetti for simple olive oil sauces, casarecce for pesto or orecchiette for greens and sausage.
